Chinched goes to Savour!

Chinched is participating in the Savour Food and Wine show again this year!

The Savour show  is on April 16th this year.  The show, at the Delta Hotel, offers a unique opportunity to try food and drink from several restaurants and purveyors.  More general information regarding tickets and such is available at (the restaurant association website).

And now to the food.  Last year it was duck nuggets and fries.  This year, however, Chinched is making crispy pig head carnitas with pickled carrot salsa, sour cream, scallions, and cilantro, and served in a tortilla with re-fried baked beans.  Pig heads are surprisingly meaty, and really delicious.  The heads will be slow-braised in red wine, tomatoes, chipotle, and seasonings, shaped in a terrine mould, broken and fried.  Olé.
