Since we opened our doors 4 years ago we have been focused on local ingredients with an emphasis on charcuterie. Del and Dave Oliver of Oliver’s Farm in Placentia have been supplying us with local product for our charcuterie board since day one. We chat weekly with them about what they have available that we can transform into something wonderful for our menu.
The list of items we have created from the traditionally raised cows, chickens and pigs that Del and Dave have raised is endless. We have smoked, cured, dried and braised just about anything you can image.
The Oliver’s have also kept us in constant supply of free range chicken eggs for everything from our house made pasta to our creative ice cream flavours.
Del and Dave also find the time to harvest local berries, black currents, apples and plums all of which we are happy to take off their hands to do something fun and exciting with. Our house made cassis, made with black currents is the perfect accompaniment to our “Chinched Royal” and the raspberries and strawberries occasionally appear on our dessert menu and drink list.
There is something for everyone on our menu at Chinched Bistro and chances are our friends at Oliver’s Farms have had a hand in it. From farm to plate, we are very happy to have forged a wonderful relationship with Del and Dave.
We look forward to continuing to create delicious menu items with the fruits of their labour.
